Penja grand cru white pepper is picked when ripe, soaked in spring water from the volcanic soil, cleaned and dried in the sun.
All stages of production (harvesting, retting, washing, drying, sorting) are entirely manual and carried out by the hands of women from the village. It has animal, woody and menthol notes, with a broad aromatic complexity.
